Garam Masala

Coriander seeds, pepper whole, cumin seeds and cloves- all 2 tbsp, fennel seeds – 4 tbsp, star anise – 15 nos, Cardamom- 20 nos, Cinnamon sticks- 3 big sticks, bay leaves – 4 big dry leaves.  Dry roast the above slightly and make sure doesn’t fry too much.   Let it cool and grind it in mixer.  When cooled store in air tight container.   If you like red add 5 tbsp red Korean chilly powder.
