Puli Kolumbu (taro root/garlic/eggplant/okra kolumbu)

First boil taro root and peel skin and keep it separate. If you are going to prepare eggplant/okra curry then fry eggplant in oil with with salt and keep it separate.

In a wok add sesame oil, mustard, fenugreek seeds, black sesame seeds and when mustard splatters add 5 garlic cloves, curry leaves, 2 red chillies, 1 green chilly chopped, 1 chopped onion and finally add 2 tomatoes and fry.
Then add turmeric powder 1/2 tsp, chilly powder -2 tsp, coriander powder- 2 tsp, cumin powder -1 tsp and let it boil.

Now add 1/2 cup tomato sauce/paste and 1 tsp tamarind paste. When it starts to boil add taro root/ fried eggplant/fried okra etc into it and boil for 10 minutes. Puli kolumbu ready.🍲
