February 3rd, 2019 – Super Bowl Sunday my younger daughter and I, decided to go with the Taco Sunday theme. This weekend’s forecast was cold and rainy and I know that my beloved family would love to have snacks and munchies through-out the day while watching Super Bowl. This year the competing teams were New England Patriots and Los Angeles RAMS.
My younger daughter who is a foodie, loves shopping at Sprout’s Farmers Market. We both went grocery shopping the previous day and got some pre-cooked Tortillas, cheese & Mexican groceries. We marinated the chicken and carnitas (Pork) Saturday night. Below is the taco recipe we found online and was really good and yummy.
Ingredients for Chicken Taco filling
1 tbsp.- extra-virgin olive oil
4- boneless skinless chicken breasts, cut into 1″ strips
Kosher salt
Freshly ground black pepper
2 tsp. -chili powder
2 tsp. -cumin
1/2 tsp. -garlic powder
1/4 tsp. -paprika
1/4 tsp. -cayenne
8 -corn tortillas, warmed
TOPPINGS
Thinly sliced red onion
Diced tomato
Shredded Monterey jack
Diced avocado
Fresh cilantro
Lime wedges
Ingredients for Pork Taco filling
INGREDIENTS
1 tablespoon olive oil
1 (4-5 pound) pork shoulder/pork butt/ pork belly trimmed of excess fat
1 lime, juiced and 1/2 orange squeezed
5 cloves garlic, minced
1 medium onion, roughly chopped
1 (4-ounce) can diced green chiles
1 cup water
3 bay leaves
1 tablespoon chipotle chili powder
1 teaspoon pepper
1 teaspoon salt
1 teaspoon chili powder
2 teaspoons cumin
cilantro for serving, if desired
