We have different kinds of curry powder or masala powder which was brought in from different families. My mom had her own curry powder, my mother-in-law had her own masala powder, etc.
But one thing I noticed was when we added curry powder we still added garam masala and some additional spices whole(cloves, cardamom, cinnamon) for flavor, taste and their medicinal qualities. And my kids would take the spices out from the dish while they eat as we all know that some spices tastes bad by itself. So I came up with the plan to grind everything into the curry powder and have one curry powder which we can use for almost all dishes expect fish curry (as we south Indians do not use cloves/cardamom/cinnamon in fish curry). All the below ingredients are good for health and has medicinal values.
Ingredients:
- 2 cup red chilly whole
- 2 cup coriander seed
- 4 star Anise
- 2 bay leaves
- 20 – 2′ stick cinnamon
- 20 cloves
- 10 cardamom
- 1/2 cup Fennel
- 1/4 cup cumin
- 1/4 cup pepper corn
- 1/4 cup Raw Rice
- 1/4 cup black urid dhal
- 1/3 toor dhal
- 1/3 moong dhal
- 1/3 channa dhal
- 2 tbsp horse gram
- 1 tbsp LG
- Curry leaves – 1 handful
First dry roast red chilli and then dry roast toor thal, channa dhal, horse gram, then coriander seeds, then dry roast the rest and cool it completely. Grind in blender and cool it completely. Store it in airtight container
